Oh Look, Cake! Classic Chocolate Torte.

This, ladies and gentlemen, is one of my utmost favourite recipes: A classic chocolate torte! This is the recipe for a 26cm diameter pan.

Don't forget to butter and powder the pan. I place a sheet of baking parchment on the bottom. Set the oven to 175 C.

First you melt 300g of chocolate in 200g of butter. I use a water bath. Direct heat is not advisable.

Sift half a cup of flour + 1 teaspoon of baking powder + 3 tablespoons of cocoa and set them aside.

Next, separate 6 eggs. Add 1/3 cup of caster sugar to the yolk, whisk until creamy, and 3/4 cups of caster sugar to the white, whisk until white peaks form.

Now, add the ingredients to the melted chocolate in this order:
1- The egg yolk
2- The flour.
3- fold in the egg whites using a spatula.

Bake for 30-35 minutes.

Oh look, cake! Keep in mind that it will not dome and it WILL collapse once it deflates, which is the way it's meant to be. It refrigerates well, just patiently wait for it to return to room temperature before eating. Try the recipe, blog it, and link me!
